Calabrian Chili Peppers are amazing little peppers with a spicy vinegar flavor. They really brighten up the dish and add a little bite to the chicken.

Difficulty: Medium

  1. Heat a Rondeau Pan over medium heat with the olive oil
  2. Season the chicken with salt and pepper and place it into the pot
  3. Brown the chicken evenly on all sides
  4. Add the garlic and onions and cook them for 4-5 minutes until the onions are translucent
  5. Add the peppers, mushrooms, Calabrian Chili Peppers and olives and allow the mixture to cook for 4-5 minutes until the peppers begin to soften
  6. Stir the tomato paste into the dish and cook for 5 minutes, stirring frequently
  7. Pour in the red wine and bring the sauce to a simmer
  8. Simmer the pot until the alcohol smell has evaporated
  9. Add all of the other ingredients and allow the chicken to simmer for 25 minutes until the chicken begins to pull away from the bone
