Olive Oil Smashed Potatoes
Difficulty: Easy
- Preheat the oven to 350 degrees
- On a sheet tray, evenly spread the salt to form a layer
- Place the potatoes on top of the salt and roast in the oven for 45 minutes
- Remove from oven, peel while hot and crush the potatoes with a fork
- While crushing the potatoes, slowly add in the olive oil until incorporated
- Add the chopped parsley and season with salt and pepper
