Chicken Cacciatore
Calabrian Chili Peppers are amazing little peppers with a spicy vinegar flavor. They really brighten up the dish and add a little bite to the chicken.
Difficulty: Medium
- Heat a Rondeau Pan over medium heat with the olive oil
- Season the chicken with salt and pepper and place it into the pot
- Brown the chicken evenly on all sides
- Add the garlic and onions and cook them for 4-5 minutes until the onions are translucent
- Add the peppers, mushrooms, Calabrian Chili Peppers and olives and allow the mixture to cook for 4-5 minutes until the peppers begin to soften
- Stir the tomato paste into the dish and cook for 5 minutes, stirring frequently
- Pour in the red wine and bring the sauce to a simmer
- Simmer the pot until the alcohol smell has evaporated
- Add all of the other ingredients and allow the chicken to simmer for 25 minutes until the chicken begins to pull away from the bone
