Cheddar Popovers

These popovers are the perfect start to any meal. Substitute Swiss, Parmigiano or any cheese you like to amp up the flavor for your next dinner party or brunch.
Difficulty: Medium
- Preheat the oven to 450 degrees
- Place a popover pan or muffin tin in the oven to heat up
- In a bowl, combine the eggs, milk and 2 tbsp of melted butter and whisk well to incorporate
- In a large bowl, combine the flour and salt
- Pour in the wet mix and the cheddar cheese and whisk until the mixture is smooth
- Remove the pan from the oven, spray with nonstick spray and add a ½ tsp of melted butter to each cup
- Divide the batter into the cups and immediately put the pan back in the oven for 20 minutes
- After 20 minutes, reduce the heat to 325 degreed and bake for an additional 10-15 minutes until golden brown
- Remove from the oven and serve warm
